Both flours are stonemilled organic, un-bleached, no further refinement and no additive. The difference between plain flour and cake pastry flour is that plain flour is made from HARD WHEAT, high protein, harder to rise because the flour is heavier. Its an all-purpose flour for cooking needs.
Cake pastry flour is made from SOFT WHEAT, less protein, lighter, hence, easier to rise which is excellent for baking cakes and pastries.
